Baked Garlic-Breadcrumb Oysters
Instructions:
Preheat the oven to 220 degrees celsius.
Clean the oysters before shucking (most Jade-S oysters come pre-cleaned). Shuck the oysters and place on a lined baking tray ( you can use baking paper or tin foil).
In a pan (saucepan or skillet) over a medium heat, melt 4 tbsp of Jersey Butter. Add in the garlic, once the garlic has started to cook, add the breadcrumbs – stir until brown. (add chilli at this stage, if using)
Mix the remaining butter and herbs together with the zest and juice of 1 lemon.
Top the oysters in the 2 mixtures. Firstly add the herb-butter mix, then top with the garlic-breadcrumb mix. Cook for 8 to 10 minutes in the oven (make sure the top is looking crispy and golden!)
Serve with lemon wedges.
