Baked Garlic-Breadcrumb Oysters

Ingredients:

  • 12 Jersey Oysters

  • 8 tbsp of Jersey Butter

  • ¾ cup of breadcrumbs

  • 1 lemon (tsp zest & tbsp juice)

  • 1 lemon (wedges)

  • Breadcrumbs

  • 1 to 1.5 cloves of garlic (crushed)

  • 2 tbsp finely chopped chives (you can also add some parsley into the mix!)

Instructions:

  1. Preheat the oven to 220 degrees celsius.

  2. Clean the oysters before shucking (most Jade-S oysters come pre-cleaned). Shuck the oysters and place on a lined baking tray ( you can use baking paper or tin foil).

  3. In a pan (saucepan or skillet) over a medium heat, melt 4 tbsp of Jersey Butter. Add in the garlic, once the garlic has started to cook, add the breadcrumbs – stir until brown. (add chilli at this stage, if using)

  4. Mix the remaining butter and herbs together with the zest and juice of 1 lemon.

  5. Top the oysters in the 2 mixtures. Firstly add the herb-butter mix, then top with the garlic-breadcrumb mix. Cook for 8 to 10 minutes in the oven (make sure the top is looking crispy and golden!)

  6. Serve with lemon wedges.

For a kick add some paprika or chilli powder or try freshly chopped chilli!
