How to Store & Cook Lobsters

It’s best to cook your lobster the day it arrives. Lobsters are highly perishable but can be stored for 24-48 hours by wrapping them in a damp towel and storing in the front of the refrigerator. Lobsters will perish if they dry out, so the longer they are stored the greater the risk they will dry out and perish.

Lobsters are saltwater creatures, Don’t store them in tap water.

How to cook your lobster:

  1. Put your lobster to sleep by placing in the freezer for 30 mins. If the lobster is still active after this time, put back in the freezer for a little while longer.

  2. Fill a large cooking pot ¾ full of water and add 12 tablespoons of sea salt for each gallon (3.8 litres) of water.

  3. Bring the saltwater to the boil and add your lobster(s) to the pot, they should be fully submerged in the water.

  4. Boil your lobster(s) for 8 mins per 1lb (0.45kg)of lobster. Keep the lid on the pot and stir half-way through cooking time.

  5. Cooked lobster should be bright red once done.

  6. Take lobster out of the pot and let stand for 3-5 mins before serving.
