Oven Baked or BBQ Sea Bass

This recipe works perfectly both in the oven or on the BBQ!

Ingredients:

  • Garlic 3 cloves (crushed)

  • 1 inch fresh ginger (crushed)

  • 1 or 2 red or green chilies chopped

  • Zest of 1 lemon

  • Juice from ½ lemon

  • Coarse salt 1-2 teaspoons

  • Black pepper

  • Bay leaves or dill (optional)

  • Olive oil

You’ll also need - Tinfoil

Instructions:

  1. Pre-heat the oven to 200 degrees C /or/ light the BBQ!

  2. Descale the bass (do this under water using a flat knife, spoon, or descaler. Be careful of the spines!)

  3. Score the bass’ skin a few times with a filleting or sharp knife. Layer a baking tray with tin foil. And place the bass onto it.

  4. Pound/mix the ingredients together (excluding the olive oil), then squeeze half a lemon’s juice into the paste and add black pepper.

  5. Rub the mix all over the bass make sure it goes into the cavities (both sides!). If using the bay leaves or dill this is the time to place them into the cavities.

  6. Drizzle the bass in olive oil then scrunch up the foil to make a parcel. Add another layer of tinfoil around the bass parcel and place onto a baking tray or onto the BBQ! Check the fish after 35 mins, if its not cooked through cook for a little longer!

Any leftovers are perfect for lunch the next day, especially when coupled with some salad!
